WHY IT EXISTS: In 2009 we became the first winery in Canada to make frizzante, importing the equipment from Germany because it didn't exist here. It took a certain confidence. The blend rests a minimum of three months in a pressure tank while CO2 slowly weaves into the wine. No second fermentation, no yeast aging, none of Champagne ceremony. Just wine that tastes vividly young, with the tiniest, softest bubbles imaginable.
IN THE GLASS: Strawberries and ripe peach on the nose. Creamy berry fruit and bright acidity on the palate; a delicate mousse that tickles rather than prickles. Medium-dry and disarmingly cheerful.
AT THE TABLE: Made for celebrations, wasted if saved for them. Brunch, lunch, cheese and charcuterie, rich seafood, creamy sauces. Those little bubbles cut through richness like a grin cuts through a bad day. Also in 375ml Pettie size—the perfect two-glass occasion.
