WHY IT EXISTS: Confidence's drier, cooler-headed sibling, and the second half of a pair of names that describe how this family does business. Same pioneering frizzante method, same soft bubble - built on Kerner, an aromatic Riesling cross that deserves far more fame than it gets. However, one reason we made Integrity was to find a home for Chardonnay. Since 2007/2008, no one wanted to buy Chardonnay because of the heavily oaked versions from California—the ABC movement (Anything But Chardonnay) was real. We even had guests refuse to simply sample our Chardonnay. With 2 acres of Chardonnay plantings, we couldn't just replant with a trendier Sauvignon Blanc. It is expensive and takes at least 3-4 years before the first harvest. In short, we had to find a way to make the Chardonnay appealing—and frizzante was our risky solution. People in the wine industry asked us why we would do something like frizzante, and it worried us but also made us more determined. In the end, it paid off in so many ways.
IN THE GLASS: Citrus, Asian pear, apricot and a flash of passionfruit, presented dry-leaning and precise, with that signature gentle sparkle.
AT THE TABLE: Oysters and anything from the sea, salty snacks, soft cheeses, or simply an apéritif with a view. Integrity keeps its word.
