WHY IT EXISTS: On September 1st 2007, we took over an empty building and, 18 days later, processed our first grapes from that vintage. While we had so much to organize, it was clear we wouldn't start with a sparkling wine program using Pinot Meunier. It was also clear that we would have white & red wines in the portfolio, and that we needed a Rosé! However, we never wanted to use the Pinot Noir—Bernd favourite red—as a Rosé, so we used the flavourful Pinot Meunier instead. The Pinot Meunier Rosé became so popular that we never considered using it for anything else. It is the quiet third grape of Champagne. Dark-skinned, rarely bottled alone, and grown right here on our delta. Twenty-four hours of skin contact gives the blush—a gentle press and cool stainless fermentation keeps every bit of the fruit. Year after year, this is the bottle our regulars buy by the case.
IN THE GLASS: Crisp and zesty. Strawberry up front, pink grapefruit and baked rhubarb behind it, a whisper of guava on the finish. Aromatic, lively, dangerously easy.
AT THE TABLE: All-day, everyday rosé. Summer barbecue, fresh salads, seafood, pork, pasta—and don't overlook it at Thanksgiving—few wines please a whole turkey-laden table like a proper rosé.
